Ingredients
Scale
Fish and Seasoning
- 4 white fish fillets (such as cod, halibut, or tilapia)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
Vegetables and Toppings
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and halved
- 1/4 red onion, thinly sliced
- 1 tablespoon capers (optional)
- Juice of 1 lemon
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and lightly grease a baking dish large enough to hold the fish fillets in a single layer.
- Prepare the fish: Pat the fish fillets dry using paper towels and place them evenly in the prepared baking dish.
- Make the seasoning mixture: In a small bowl, combine the olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Mix well to create a flavorful brush-on marinade.
- Season the fish: Brush the olive oil and spices mixture generously over each fish fillet, ensuring they are well coated.
- Add vegetables and toppings: Scatter the halved cherry tomatoes, kalamata olives, thinly sliced red onion, and optional capers around and on top of the fish in the dish.
- Add lemon juice: Squeeze the juice of one lemon evenly over the entire baking dish to brighten the flavors.
- Bake the fish: Place the dish in the preheated oven and bake uncovered for 15 to 18 minutes, or until the fish flakes easily with a fork and is opaque throughout.
- Garnish and serve: Remove from oven, sprinkle chopped fresh parsley over the fish, and serve hot with lemon wedges on the side.
Notes
- This dish pairs wonderfully with couscous, rice, or crusty bread to soak up the flavorful juices.
- Feel free to substitute fresh herbs like dill or basil if you prefer a different herbal profile.
- Use firm white fish fillets to avoid overcooking or the fish falling apart during baking.
