Chicken and Marinade

Instructions
- Marinate the chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, oregano, thyme, paprika, garlic powder, salt, pepper, and minced garlic. Add the chicken and toss to coat thoroughly. Cover and let marinate in the refrigerator for at least 30 minutes or up to 4 hours to allow the flavors to infuse.
- Preheat and sear the chicken: Preheat your oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat and drizzle with a little olive oil. Add the marinated chicken pieces and sear for 2 to 3 minutes per side until they develop a golden-brown crust, locking in juices and flavor.
- Add vegetables and bake: Surround the seared chicken in the skillet with the halved cherry tomatoes and Kalamata olives. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), ensuring it’s fully cooked and tender.
