- 2 cups pitted Medjool dates, chopped
- 1 1/2 cups walnuts, roughly chopped
- 1 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/4 cup honey or maple syrup
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare the baking dish: Line an 8×8-inch baking dish with parchment paper to ensure easy removal of the slice after setting.
- Create the date paste: Place the chopped Medjool dates into a food processor and blend until they form a thick, sticky paste, which will bind the other ingredients together.
- Add remaining ingredients: Add walnuts, rolled oats, shredded coconut, honey or maple syrup, cocoa powder, vanilla extract, and a pinch of salt to the food processor.
- Combine the mixture: Pulse the mixture until the ingredients come together and the mixture feels sticky and cohesive when pressed between your fingers.
- Press into baking dish: Transfer the mixture into the prepared baking dish and press firmly into an even layer to ensure the squares hold together.
- Chill the slice: Refrigerate the slice for at least 2 hours until firm, allowing the flavors to meld and the texture to set.
- Slice and serve: Lift the slice out of the pan using the parchment paper. Cut into 12 equal slices or squares and enjoy.
