Description

This No-Bake Date Walnut Slice is a simple, wholesome treat combining naturally sweet dates, crunchy walnuts, and rolled oats with a hint of cocoa and almond butter for richness. Ready in just 10 minutes of prep and chilled to firm up, it’s a perfect healthy snack or dessert that requires no baking.

Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups pitted dates (about 12-15 dates)
  • 1 cup walnuts, chopped
  • 1/2 cup rolled oats
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp sea salt
  • 1 tbsp chia seeds (optional, for extra nutrition)

Wet Ingredients

  • 1/4 cup almond butter (or peanut butter)
  • 1 tbsp honey or maple syrup (optional, for added sweetness)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Dates – In a food processor, pulse the pitted dates until they form a sticky paste. If the dates are too dry, add a tablespoon of water to help them blend smoothly.
  2. Mix the Ingredients – Add the chopped walnuts, rolled oats, cocoa powder, almond butter, honey or maple syrup (if using), vanilla extract, and sea salt to the food processor. Blend everything until well combined and sticky enough to hold together when pressed.
  3. Press the Mixture into a Pan – Line an 8×8-inch (or similar) square pan with parchment paper. Transfer the mixture into the pan and press firmly with a spatula to form an even layer.
  4. Chill the Slice – Refrigerate the pan for at least 2 hours or until the mixture is firm and set.
  5. Serve – Once chilled and set, slice the date walnut mixture into squares or bars. Enjoy the naturally sweet, nutty snack!

Notes

  • For a nut-free version, substitute walnuts and almond butter with seeds like sunflower or pumpkin seeds and tahini.
  • Make sure dates are soft; if not, soak them in warm water for 10 minutes before processing.
  • Store the slices in an airtight container in the refrigerator for up to one week.
  • Adding chia seeds boosts fiber and omega-3 but is optional.
  • Honey or maple syrup is optional; omit for less sweetness or a vegan version if using honey.
