Dry Ingredients:
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar (packed)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon

Wet Ingredients:
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat the oven and prepare the muffin tin: Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
- Soak the oats: In a medium bowl, combine the oats and milk. Let sit for 10–15 minutes to soften.
- Prepare the batter: In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Add the soaked oats, oil, egg, and vanilla extract to the dry ingredients and stir until just combined. Do not overmix.
- Bake the muffins: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Bake for 18–22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and serve: Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can mix in 1/2 cup of raisins, chopped nuts, or chocolate chips for added texture and flavor.
- For a healthier version, substitute half the flour with whole wheat flour and use maple syrup or honey in place of brown sugar.
