Description

This One-Pan Beef and Rice Skillet is a delicious and easy-to-make meal that combines flavorful ground beef, rice, and vegetables in a savory dish topped with melted cheese.

Ingredients

Scale

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced

Seasonings:

  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 cup long-grain white rice, uncooked
  • 2 1/4 cups beef broth
  • 1 cup canned diced tomatoes with juices
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare Ground Beef Mixture: In a large skillet over medium heat, sauté onion and bell pepper until softened. Add garlic and cook for an additional minute. Brown the ground beef, breaking it up with a spoon. Drain excess grease if necessary.
  2. Add Seasonings and Rice: Stir in chili powder, paprika, oregano, salt, and black pepper. Add rice, diced tomatoes, and beef broth. Bring to a boil.
  3. Simmer: Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  4. Finish and Serve: Remove from heat, top with shredded cheddar cheese, cover for a few minutes until melted. Garnish with parsley before serving.

Notes

  • You can use brown rice with adjusted cooking time and broth amount.
  • For a spicier dish, consider adding cayenne or jalapeños.
