Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
Seasonings:
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 1 cup long-grain white rice, uncooked
- 2 1/4 cups beef broth
- 1 cup canned diced tomatoes with juices
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Chopped fresh parsley for garnish (optional)
Instructions
- Prepare Ground Beef Mixture: In a large skillet over medium heat, sauté onion and bell pepper until softened. Add garlic and cook for an additional minute. Brown the ground beef, breaking it up with a spoon. Drain excess grease if necessary.
- Add Seasonings and Rice: Stir in chili powder, paprika, oregano, salt, and black pepper. Add rice, diced tomatoes, and beef broth. Bring to a boil.
- Simmer: Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Finish and Serve: Remove from heat, top with shredded cheddar cheese, cover for a few minutes until melted. Garnish with parsley before serving.
Notes
- You can use brown rice with adjusted cooking time and broth amount.
- For a spicier dish, consider adding cayenne or jalapeños.
