Greens:
- 2 cups mixed greens or arugula
Dressing:
- 2 tablespoons olive oil

Instructions
- Roast the Beets: Preheat the oven to 400°F. Wrap each beet in foil and roast for 45–60 minutes until tender. Peel and slice the cooled beets.
