Description

Papparoti Coffee Buns are soft, fluffy buns topped with a luscious, crisp coffee-flavored crust. These delicious baked treats combine a tender yeast dough with a creamy coffee butter topping that bakes into a crunchy, flavorful layer. Perfect for breakfast or an afternoon snack paired with your favorite hot beverage.

Ingredients

Scale

For the Dough:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract

For the Coffee Topping:

  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 2 tablespoons instant coffee (dissolved in 1 tablespoon hot water)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract

For the Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon milk

Instructions

  1. Mix the Dough: In a large bowl, combine the all-purpose flour, granulated sugar, instant yeast, and salt. In a separate bowl, whisk together the warm milk, egg, and vanilla extract, then add this wet mixture to the dry ingredients and stir until a dough begins to form.
  2. Knead the Dough: Transfer the dough to a floured surface and knead for 8 to 10 minutes until it becomes smooth and elastic. Add additional flour if the dough is sticky.
  3. First Rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise at room temperature for 1 to 1.5 hours until it doubles in size.
  4. Prepare the Coffee Topping: While the dough rises, beat together softened butter, powdered sugar, dissolved instant coffee, all-purpose flour, and vanilla extract until smooth and creamy. Set aside.
  5. Shape the Buns: After the dough has risen, punch it down and divide into 8 equal portions. Roll each piece into a smooth ball and place them spaced apart on a parchment-lined baking tray.
  6. Second Rise: Let the shaped dough balls rise again for 20 to 30 minutes at room temperature until puffed up.
  7. Apply Egg Wash: Mix the beaten egg with milk and brush this egg wash gently over the surface of each risen bun to achieve a golden crust when baked.
  8. Add Coffee Topping: Spoon or pipe the prepared coffee topping over each bun in a swirl pattern, covering the top.
  9. Bake the Buns: Bake in a preheated oven at 350°F (175°C) for 15 to 20 minutes, until the buns are golden brown on top, the coffee crust is crisp, and the buns are fully cooked.
  10. Cool and Serve: Allow the buns to cool slightly before serving warm, ideal with coffee or tea.

Notes

  • Ensure the milk is warm, not hot, to activate the yeast properly and prevent killing it.
  • Knead the dough sufficiently to develop gluten for a soft and airy texture.
  • Use instant coffee dissolved in hot water for the best intense coffee flavor in the topping.
  • The egg wash helps achieve a shiny golden finish on the buns.
  • Serve the buns warm to enjoy the contrast between the soft interior and crunchy coffee crust.
