Description

Peach Filling

  • 6–7 fresh peaches, peeled and sliced (about 5 cups)
  • 3/4 cup granulated sugar, divided
  • 1 tsp lemon juice
  • 1 tsp ground cinnamon, divided
  • 1/4 tsp ground nutmeg

Batter

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 tsp vanilla extract


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cobbler.
  2. Prepare Peach Mixture: In a large bowl, toss the peeled and sliced peaches with 1/4 cup of sugar, lemon juice, 1/2 teaspoon of cinnamon, and ground nutmeg. Set this mixture aside to allow the flavors to meld.
  3. Make Batter: In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, salt, and the remaining 1/2 teaspoon cinnamon. Stir in the milk and vanilla extract until just combined, being careful not to overmix.
  4. Assemble Cobbler: Pour the melted butter into a 9×13-inch baking dish. Pour the batter over the melted butter carefully without stirring. Then spoon the peach mixture along with its juices evenly over the batter, again without stirring to create the signature cobbler layers.
  5. Bake: Place the baking dish in the oven and bake for 45–50 minutes, or until the top is golden brown and the batter has risen around the fruit.
  6. Cool and Serve: Let the cobbler cool for 10–15 minutes before serving. For an extra treat, serve warm with vanilla ice cream or whipped cream.
