Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
- Make the dough: In a large bowl, beat together the softened butter, granulated sugar, and pink lemonade mix until light and fluffy. Add the egg, vanilla extract, lemon juice, and lemon zest, and mix until well combined. Gradually stir in the dry ingredients until a soft dough forms.
- Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet. If desired, roll in pink sanding sugar or sprinkles. Bake for 9–11 minutes, until edges are set and centers are still soft.
- Cool and serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
