Description

Salt and Pepper Tofu is a crispy and flavorful Chinese vegan dish featuring extra-firm tofu cubes coated in a seasoned cornstarch mixture and pan-fried to golden perfection. Enhanced with aromatic garlic, green onions, and optional chili, this quick stovetop recipe offers a perfect balance of spicy, savory, and crunchy textures ideal for a main course.

Ingredients

Scale

Tofu and Coating

  • 1 block (14 oz) extra-firm tofu, pressed and cut into 1-inch cubes
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili flakes (optional)

For Frying and Flavor

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, finely minced
  • 2 green onions, sliced
  • 1 small chili (like red Thai chili), finely sliced (optional)

Instructions

  1. Press and Cut Tofu: Press the tofu for at least 20 minutes to remove excess moisture, helping it become crispier when cooked. Once pressed, cut the tofu into 1-inch cubes for even frying.
  2. Prepare Seasoned Coating: In a bowl, combine cornstarch, salt, black pepper, white pepper (if using), garlic powder, and chili flakes (if using). Toss the tofu cubes thoroughly in this mixture until all sides are evenly coated.
  3. Fry the Tofu: Heat vegetable oil in a large skillet or wok over medium-high heat. Arrange the tofu cubes in a single layer in the hot oil. Fry each side for about 2 to 3 minutes until the tofu turns golden brown and crispy on all sides, turning carefully to avoid breaking.
  4. Add Aromatics and Stir-Fry: Once the tofu is golden, add the minced garlic, sliced green onions, and sliced chili (if using) directly to the pan. Stir-fry these together for 1 to 2 minutes until the garlic becomes fragrant and the onions soften slightly.
  5. Serve Immediately: Remove the skillet from heat and serve the salt and pepper tofu hot to enjoy its crisp texture and bold flavors at their best.

Notes

  • For extra crispiness, consider using an air fryer or double-frying the tofu.
  • White pepper adds authentic flavor to the dish but can be omitted to suit your taste.
  • Adjust the amount of chili flakes and fresh chili to control the spice level according to your preference.
