Sausage and Gravy

  • 1 pound breakfast sausage
  • 1 tablespoon butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes (optional)

Pie Assembly

  • 1 can (16.3 oz) refrigerated biscuit dough
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh parsley (optional)


Instructions

  1. Brown the sausage: Preheat the oven to 375°F. In a large skillet over medium heat, cook the sausage until browned and crumbled. Use a slotted spoon to remove the sausage and set it aside, leaving the drippings in the skillet.
  2. Make the roux and gravy: In the same skillet, melt the butter over medium heat. Sprinkle in the flour and whisk constantly for 1–2 minutes until a smooth roux forms and turns lightly golden.
  3. Add milk and thicken gravy: Gradually whisk in the whole milk, continuing to whisk constantly to prevent lumps. Cook for about 5–7 minutes until the gravy thickens to a creamy consistency.
  4. Season the gravy: Stir in the salt, black pepper, garlic powder, and crushed red pepper flakes (if using) for a balanced savory flavor. Return the cooked sausage to the skillet and mix well to combine.
  5. Assemble the pie: Lightly grease a 9-inch pie or baking dish. Pour the sausage gravy mixture evenly into the dish. Sprinkle the shredded cheddar cheese on top of the gravy layer.
  6. Top with biscuits: Cut each biscuit in half horizontally, then arrange the halves biscuit-side up over the cheese layer to cover the pie completely.
  7. Bake: Place the pie in the preheated oven and bake for 20–25 minutes or until the biscuits are golden brown and cooked through.
