Description

Shakshouka Toast is a vibrant and delicious breakfast or brunch dish featuring toasted thick-cut bread topped with a rich, spiced tomato and bell pepper sauce, baked with eggs until perfectly set. This dish combines the flavors of North African shakshouka with a crispy toast base, garnished with fresh herbs and a touch of chili for a satisfying, wholesome meal.

Ingredients

Scale

Base

  • 2 slices thick-cut bread

Shakshouka Sauce

  • 1 tablespoon olive oil
  • 1/2 yellow onion, finely chopped
  • 1/2 bell pepper, diced (red or yellow)
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 cup crushed tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Eggs and Garnish

  • 2 eggs
  • Fresh cilantro or parsley, for garnish
  • Optional: pinch of chili flakes

Instructions

  1. Sauté Onions: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until softened and translucent, creating a flavorful base for the sauce.
  2. Add Bell Peppers: Add the diced bell pepper to the skillet and continue cooking for another 3-4 minutes until the peppers are tender and slightly caramelized.
  3. Add Spices and Garlic: Stir in the minced garlic, ground cumin, and smoked paprika. Cook for about 30 seconds to bloom the spices and release their aromas, stirring constantly to avoid burning.
  4. Simmer Tomato Sauce: Pour in the crushed tomatoes, then season with salt and black pepper. Reduce heat slightly and let the mixture simmer for 5-7 minutes until it thickens slightly and the flavors meld together beautifully.
  5. Toast the Bread: While the sauce simmers, toast the thick-cut bread slices in a toaster or in a skillet until golden and crisp for the perfect sturdy base.
  6. Assemble on Toast: Spoon the thickened tomato and pepper mixture evenly over each toast slice. Use the back of the spoon to create a small well in the center of each sauce-topped toast.
  7. Add Eggs: Carefully crack one egg into each well on the toast to keep it contained within the sauce.
  8. Bake with Eggs: Place the prepared toasts on a baking sheet and bake in a preheated oven at 375°F (190°C) for 8-10 minutes, or until the egg whites are set but the yolks remain soft and runny to your liking.
  9. Garnish and Serve: Remove from oven and garnish with fresh chopped cilantro or parsley, and sprinkle chili flakes if desired. Serve immediately while hot for a comforting and flavorful meal.

Notes

  • For a spicier version, add more chili flakes or a dash of cayenne pepper to the tomato sauce.
  • Use thick-cut rustic or sourdough bread for best texture and flavor.
  • Keep an eye on egg baking time to achieve your preferred yolk doneness.
  • This recipe can easily be doubled to serve more people.
  • Fresh herbs like parsley or cilantro brighten the flavors, but you can also use basil as a garnish.
