Potatoes:
- 4 large russet potatoes

- 1 lb ground beef or ground lamb
- 1 small yellow onion (diced)
- 1 carrot (peeled and diced)
- 1 clove garlic (minced)
- ½ cup frozen peas
- 1 tablespoon tomato paste
- ½ teaspoon Worcestershire sauce
- ½ cup beef broth
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon unsalted butter
- ½ cup shredded sharp cheddar cheese
- Chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the oven: Preheat the oven to 400°F. Scrub and dry the potatoes, then prick each one several times with a fork. Rub them lightly with olive oil and place directly on the oven rack. Bake for 50–60 minutes or until tender.
- Prepare the filling: While the potatoes bake, heat a large skillet over medium heat. Add the ground beef and cook until browned. Drain excess grease, then add diced onion, carrot, and garlic. Sauté until vegetables are tender. Stir in tomato paste, Worcestershire sauce, salt, and pepper. Pour in beef broth and simmer for 7–10 minutes until slightly thickened. Add frozen peas and cook for an additional 2 minutes.
- Assemble: When potatoes are done, remove from the oven and slice open lengthwise. Fluff the insides and top each with the meat mixture. Sprinkle cheddar cheese on top and return to the oven for 5–7 minutes until cheese melts.
- Serve: Garnish with fresh parsley before serving.
