  • 1/2 cup crumbled cotija cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions


Instructions

  1. Prepare Oven and Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with nonstick cooking spray to prevent sticking.
  2. Shape Crescent Dough Cups: Unroll the crescent roll dough and press pieces into the bottom and up the sides of each mini muffin cup, trimming excess dough as needed to form small cups that will hold the filling.
  3. Mix Corn Filling: In a medium bowl, combine thawed and drained corn, crumbled cotija cheese, mayonnaise, sour cream, fresh lime juice, chili powder, smoked paprika, ground cumin, garlic powder, salt, optional cayenne pepper, chopped cilantro, and green onions. Stir thoroughly until all ingredients are well blended.
  4. Fill Dough Cups: Spoon approximately 1 tablespoon of the prepared corn mixture into each crescent dough cup, filling them evenly.
  5. Bake: Place the filled muffin tin in the preheated oven and bake for 12–15 minutes, or until the crescent dough edges are golden brown and the filling is heated through.
  6. Cool and Serve: Allow the corn bites to cool slightly before gently removing them from the pan. Serve warm or at room temperature for best flavor and texture.
