Ingredients
Scale
Vegetables & Aromatics
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry
Dairy & Eggs
- 4 large eggs
- 1 cup ricotta cheese
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
Seasonings
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish to ensure the casserole doesnÂ’t stick.
- Sauté Aromatics: In a medium skillet over medium heat, warm the olive oil. Add the finely chopped onion and sauté for 4–5 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 30 seconds to release its aroma without burning.
- Combine Ingredients: Transfer the sautéed onion and garlic to a large mixing bowl. Add the thawed and well-drained chopped spinach, then add the eggs, ricotta cheese, crumbled feta, grated Parmesan, milk, salt, black pepper, and ground nutmeg. Stir everything together thoroughly until you achieve a uniform mixture.
- Bake the Casserole: Pour the mixture evenly into the prepared baking dish, spreading it out smoothly. Place the dish in the oven and bake for 35–40 minutes, until the casserole is set in the center and the top is lightly golden brown.
- Cool and Serve: Remove the casserole from the oven and allow it to cool for 5–10 minutes. This resting time helps the casserole firm up and makes it easier to cut and serve.
Notes
- Fresh spinach can be used instead of frozen; just sauté and drain it well before mixing.
- For added flavor, consider incorporating chopped sun-dried tomatoes or fresh herbs like dill or parsley.
- This casserole makes a great vegetarian main dish or a flavorful side to complement roasted meats.
