Main Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 10 ounces fresh spinach, chopped (or frozen spinach, thawed and drained)
- 3 large eggs
- 1/2 cup whole milk
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch or similar-sized baking dish to prevent sticking.
- Sauté Aromatics: Heat the olive oil in a skillet over medium heat. Add finely chopped onion and sauté until soft and translucent, approximately 4 minutes. Add minced garlic and cook for an additional minute to release its aroma.
- Cook Spinach: Stir in the chopped fresh spinach and cook until wilted, or if using frozen spinach, ensure it’s heated through. Remove from heat and allow the mixture to cool slightly to avoid scrambling the eggs in the next step.
- Mix Custard Base: In a large bowl, whisk together the eggs and whole milk until thoroughly combined, creating a smooth custard base.
- Combine All Ingredients: Add crumbled feta cheese, grated Parmesan, ground nutmeg, salt, and black pepper to the egg mixture. Then fold in the cooked spinach and onion mixture until evenly distributed.
- Assemble the Casserole: Pour the combined mixture into the prepared baking dish and spread evenly. If desired, sprinkle the breadcrumbs evenly over the top to add a crispy texture.
- Bake: Bake in the preheated oven for 30 to 35 minutes, or until the casserole is set in the center and has developed a light golden crust on top.
- Rest and Serve: Allow the casserole to rest for 5 minutes after baking. This helps it set further and makes serving easier. Slice and serve warm as a main dish or side.
Notes
- This casserole works well as a hearty vegetarian main or as a savory side dish.
- You can prepare it ahead of time and reheat before serving for convenience.
- For a milder flavor, substitute part of the feta cheese with ricotta or cottage cheese.
- Use gluten-free breadcrumbs or omit them entirely to keep the dish gluten-free.
