Description

Indulge in a unique twist on traditional sushi with these Strawberry Shortcake Cheesecake Dessert Sushi Rolls. Creamy cheesecake filling, fresh strawberries, and a touch of white chocolate, all rolled up in a tortilla or sponge cake sheet for a fun and delicious treat.

Ingredients

Scale

Cheesecake Filling:

  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups crushed shortbread cookies or vanilla wafer crumbs
  • 1 cup whipped topping

Additional Ingredients:

  • 2 cups fresh strawberries, hulled and diced
  • 2 large flour tortillas or thin sponge cake sheets
  • 1/4 cup strawberry jam
  • 1/4 cup white chocolate, melted
  • Additional cookie crumbs and strawberry slices for garnish

Instructions

  1. Cheesecake Filling: In a mixing bowl, beat cream cheese with powdered sugar and vanilla until smooth. Fold in whipped topping until fluffy.
  2. Place tortilla or cake sheet flat. Spread strawberry jam, then cheesecake mixture, leaving edges. Sprinkle cookie crumbs, add diced strawberries.
  3. Roll tightly into a log, wrap in plastic, chill for 1 hour. Slice into rounds.
  4. Drizzle with melted white chocolate, sprinkle with crumbs, garnish with strawberries. Serve chilled.

Notes

  • For a lighter version, use reduced-fat cream cheese and light whipped topping.
  • Sponge cake sheets create a more dessert-like roll, while tortillas are easier and sturdier.
  • You can substitute raspberries or blueberries for a flavor twist.
