Ingredients
Scale
Main Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 2 cups salsa
- 2 cups shredded Mexican cheese blend
- 6 large flour tortillas
- Nonstick cooking spray
Optional Toppings
- Sour cream
- Chopped cilantro
- Diced tomatoes
- Sliced jalapeños
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray to prevent sticking and ensure easy cleanup.
- Cook the beef and onions: In a large skillet over medium heat, cook the ground beef alongside the diced onion. Stir and cook until the beef is fully browned and the onion becomes soft, which should take about 6 to 8 minutes. Drain any excess fat to reduce grease.
- Add seasoning and simmer: Stir in the taco seasoning and 1/2 cup of water into the cooked beef and onions. Allow the mixture to simmer for 2 to 3 minutes to let the flavors meld together.
- Incorporate beans and corn: Mix in the drained black beans and frozen corn into the beef mixture. Stir until all ingredients are well combined and evenly distributed.
- Start layering: Spread a few spoonfuls of salsa evenly on the bottom of the prepared baking dish. Lay down 2 of the flour tortillas on top of the salsa, slightly overlapping them.
- Add filling layers: Spread one-third of the beef mixture over the tortillas. Then top with one-third of the salsa and one-third of the shredded Mexican cheese blend. Repeat this layering process two more times, finishing with a layer of cheese on the top.
- Bake covered: Cover the assembled lasagna with aluminum foil. Bake in the preheated oven for 20 minutes to heat through and meld flavors.
- Bake uncovered: Remove the foil and continue baking for an additional 10 minutes until the cheese on top is bubbly and lightly browned.
- Rest before serving: Allow the taco lasagna to rest for 10 minutes after removing it from the oven. This helps it firm up for easier slicing and serving.
- Serve with toppings: Slice the lasagna and serve it warm with your choice of optional toppings such as sour cream, chopped cilantro, diced tomatoes, or sliced jalapeños.
Notes
- You can substitute ground turkey or chicken for the beef for a leaner option.
- For a spicier version, use hot salsa or add a dash of cayenne pepper to the meat mixture.
