  • 1 pound ground chicken
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, finely diced
  • 1/2 cup shredded carrots
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha (optional)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1 head butter lettuce or iceberg lettuce, leaves separated


Instructions

  1. Heat sesame oil: Heat sesame oil in a large skillet over medium-high heat.
  2. Cook chicken: Add the ground chicken and cook for 5–6 minutes until no longer pink.
  3. Add aromatics: Stir in garlic and ginger and cook for 1 minute.
  4. Cook vegetables: Add bell pepper and carrots, cook for 3 minutes.
  5. Season and finish: Stir in hoisin sauce, soy sauce, rice vinegar, lime juice, and sriracha. Cook for 2–3 minutes, then stir in cilantro and green onions.
  6. Assemble wraps: Spoon chicken mixture into lettuce leaves, top with chopped peanuts.
  7. Serve: Enjoy immediately.
