Ingredients
Scale
Brownie Batter
- 1 box (18.3 oz) fudge brownie mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup water
Mascarpone Filling
- 8 oz mascarpone cheese
- 4 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
Coffee Mixture
- 1/2 cup strong brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
For Garnish
- 1 tablespoon unsweetened cocoa powder for dusting
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper to ensure even baking and easy removal.
- Prepare Brownie Batter: In a large bowl, combine the fudge brownie mix, vegetable oil, eggs, and water. Mix according to package instructions until smooth and fully incorporated.
- Layer Base Brownie Batter: Pour half of the prepared brownie batter into the baking pan, spreading it evenly to form the first layer.
- Prepare Mascarpone Filling: In a separate bowl, beat together mascarpone cheese, softened cream cheese, granulated sugar, egg yolk, all-purpose flour, and vanilla extract until the mixture is smooth and creamy.
- Mix Coffee Mixture: In a small bowl, combine the cooled brewed coffee with coffee liqueur if using, stirring gently.
- Soak Brownie Base: Using a brush, evenly distribute half of the coffee mixture over the brownie layer in the pan to infuse it with coffee flavor.
- Spread Mascarpone Layer: Gently spread the mascarpone filling over the coffee-soaked brownie base, creating a smooth, even layer.
- Add Top Brownie Layer: Spoon the remaining brownie batter over the mascarpone layer. Use a knife to gently swirl the top batter, creating a marbled effect.
- Soak Top Layer: Brush the remaining coffee mixture evenly over the top brownie layer to add moisture and flavor.
- Bake: Place the pan in the preheated oven and bake for 35 to 40 minutes, or until a toothpick inserted near the center comes out with moist crumbs.
- Cool and Chill: Allow the brownies to cool completely in the pan. Then refrigerate for at least 2 hours to let the flavors meld and the mascarpone layer set.
- Serve: Before serving, dust the top with unsweetened cocoa powder. Optionally, add shaved chocolate for an extra decadent touch.
Notes
- For extra decadence, top with a dusting of shaved chocolate.
- These brownies taste even better the next day after chilling overnight.
- If you don’t have mascarpone, you can substitute with additional cream cheese, though the flavor may be slightly tangier.
