Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Combine Dry Ingredients: In a large mixing bowl, mix together the rice or corn cereal squares, mini pretzels, and honey-roasted peanuts to form the base of your snack mix.
- Mix Coffee Coating: In a separate bowl, whisk together cooled brewed strong coffee or espresso, melted unsalted butter, brown sugar, vanilla extract, cinnamon, and salt until fully blended and smooth.
- Coat Mix: Pour the coffee mixture evenly over the dry ingredients and toss thoroughly to coat all pieces with the flavorful coffee-butter glaze.
- Spread and Bake: Spread the coated mixture out evenly on the prepared baking sheet. Bake in the preheated oven for 35–40 minutes, stirring gently every 10–15 minutes to promote even toasting and crisping.
