Ingredients
Scale
For the Tofu and Vegetables
- 10-12 oz tofu, cut into about 24 thin rectangular slices
- 2 large cucumbers, sliced into long strips
- 4 large carrots, sliced into thin strips and then rectangles
For the Seasoning and Sauté
- 1/4 cup onions, diced
- 2-3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon water
- 1/4 teaspoon garlic salt
Instructions
- Season tofu slices: Cut the tofu into 24 thin rectangular slices. Sprinkle each slice evenly with garlic salt and set them aside to absorb the seasoning.
- Prepare carrots: Slice the carrots into thin strips, ideally using a mandolin for uniformity. Then cut strips into rectangular shapes matching the size of the tofu slices.
- Slice cucumbers: Using a mandolin, slice cucumbers lengthwise into long thin strips for rolling.
- Saute aromatics: Heat vegetable oil over medium-high heat in a pan. Add minced garlic and diced onions, and sauté until the onions turn translucent and fragrant.
- Prepare soy sauce dip: Mix soy sauce with water in a shallow dish. Dip each tofu slice into this mixture before cooking.
- Cook tofu: Place the dipped tofu slices into the pan and sauté until both sides are golden brown and slightly crispy.
- Drain excess oil: Once cooked, transfer tofu slices to paper towels to absorb any residual oil.
- Assemble rolls: Place a slice of tofu and a few carrot rectangles on one end of a cucumber strip. Carefully roll it up and secure with a toothpick to hold the roll intact.
Notes
- Using a mandolin for slicing vegetables ensures uniform thickness and easier rolling.
- Adjust the garlic salt quantity according to your taste preference or dietary restrictions.
- These rolls are best served fresh to maintain crispness of the vegetables.
- Vegetable oil can be substituted with olive or avocado oil for a healthier option.
- Consider serving with a dipping sauce like soy sauce or a spicy chili sauce for extra flavor.
