- Mix Wet Ingredients: Whisk in the remaining sugar, eggs, vanilla extract, and melted butter into the yeast mixture until fully combined.
- Add Dry Ingredients and Form Dough: Gradually add the flour and salt to the wet mixture, stirring until a soft dough forms.
- Knead Dough: Transfer the dough to a lightly floured surface and knead for 5–7 minutes until the dough is smooth and elastic.
- First Rise: Place the kneaded dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
- Shape Beignets: Punch down the risen dough and roll it out to about 1/4-inch thickness. Cut into 2-inch squares using a knife or pastry cutter.
- Heat Oil for Frying: Heat vegetable oil in a deep pot or fryer to 350°F, ensuring there is enough oil for the beignets to float and cook evenly.
- Fry Beignets: Fry the beignets in batches for 1–2 minutes per side or until they turn golden brown and puff up. Use a slotted spoon to remove them from the oil and drain on paper towels.
