Feta Dip:
- 8 oz block feta cheese (preferably in brine)
- ¼ cup Greek yogurt or sour cream
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 clove garlic (minced)
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh dill or parsley (optional)
Garnish:
- drizzle of honey
- extra olive oil
Instructions
- In a food processor or blender, combine the feta cheese, Greek yogurt, olive oil, lemon juice, lemon zest, garlic, and black pepper. Blend until very smooth and creamy, scraping down the sides as needed.
- Taste and adjust seasoning if desired. Transfer to a serving bowl and use a spoon to create swirls on top.
- Drizzle with a little olive oil and honey, and sprinkle with fresh herbs if using. Serve chilled or at room temperature with warm pita bread, crackers, or fresh vegetables.
Notes
- For a tangier flavor, use more lemon juice.
- To make it spicy, add a pinch of crushed red pepper flakes or a drizzle of hot honey on top.
- Store leftovers in an airtight container in the fridge for up to 4 days.
