Meatloaf Mixture

  • 1 cup crushed tortilla chips
  • 1 packet (1 oz) taco seasoning mix
  • 1 large egg
  • ½ cup salsa (plus extra for topping)

  • ½ cup finely chopped onion
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt


Instructions

  1. Preheat and prepare pan: Preheat your oven to 375°F (190°C) and lightly grease a loaf pan to prevent sticking.
  2. Combine ingredients: In a large mixing bowl, combine ground beef, crushed tortilla chips, taco seasoning, egg, salsa, shredded cheddar cheese, onion, cilantro, garlic powder, cumin, and salt. Mix gently until just combined, avoiding overmixing to keep the meatloaf tender.
